Ingredients:
- 4 Medium Sized Red or White Potatoes (cut into fourths)
- 1 lb baby carrots
- 2-3 lb pork tenderloin
- 1-2 Tbsp. Extra Virgin Olive Oil
- Italian Seasoning
- Put carrots and cut potatoes in a microwave safe bowl. Cover with saran wrap and microwave for 6 minutes.
- In the meantime, preheat an oven safe skillet to medium heat (I use a cast iron skillet). Also, preheat oven to 350 degrees.
- While the skillet is heating up, pour olive oil on the tenderloin and sprinkle with italian seasonings. Add to the pan and sear (2-3 minutes) on all (6) sides.
- Add the carrots and potatoes to the pan with the seared tenderloin and sprinkle with italian seasoning.
- Cover with aluminum foil (this keeps everything moist, and keeps the heat in the pan), and cook for 30-45 minutes until juices run clear.
- Slice the tenderloin, serve with the carrots and potatoes.
